Boiled Egg Fry is an Indian side dish where hard boiled eggs are fried with spices, herbs and sometimes with onions. Made in numerous ways across India, this simple dish of boiled egg fry is a staple in a lot of homes. I would call this a curry in a hurry and is apt when you are running out of time and want to churn out a healthy yet delicious homemade meal. Serve it as a side with rice and its variations – flavored rice such as Cumin rice, Mint rice, cilantro rice or Ghee rice. This boiled egg fry also goes well in sandwiches, rolls and wraps.
We never get bored with boiled egg fry as I make in many ways. The recipe shared here is somewhat like a dry curry and we love this as you don’t need any other side. Plain rice, this boiled egg fry and a bowl of yogurt or raita will be a complete satiating meal.
Every home in India has a different recipe to make this. This recipe is the way my MIL makes. Stir fry dishes are also called as fry, so I guess that’s the reason this is called egg fry. My Mom’s way of making boiled egg fry is very different from this and we call that Egg roast.
To make that, you will make gashes over your boiled and peeled eggs. Pan fry them in the hot ghee or oil. Later spice them with garlic, cumin, coriander and red chilli powder. This just takes 5 mins. I have shared both the recipes in the recipe card below.
I usually cook the eggs along with the rice in the stove top pressure cooker or Instant pot. While the rice and eggs cook, I make the tempering and stir fry the onions. To the spiced onion tomato masala I add the boiled eggs and continue to fry for 5 minutes until they soak up the flavors.
1. Pour water to a pot and place your rinsed eggs. Bring the water to a boil on a medium flame. Cover the pot and switch off the stove. Leave it for about ten minutes. Drain the water and peel off the shells. For first born eggs you need to boil a little longer, until you see cracks over the eggs. Peel and make gashes with a knife or prick with a fork.
2. Heat a pan with oil, add cumin, garlic and ginger, when they begin to sizzle, add onions and fry them till they turn lightly brown.
3. Add eggs, green chili, tomatoes, salt and turmeric. Fry till the tomatoes turn mushy. If tomatoes are not juicy, you can sprinkle little water to soften them, do not pour lot of water.
4. Add red chili powder, pepper powder and whatever spice powder you have. I used coriander powder and a bit of biryani masala powder.
5. Continue to fry for 3 to 4 minutes till the mixture smells roasted and good.
Serve Boiled Egg Fry with rice or its variations. To serve it in a sandwich, mash on one of the eggs and mix well. Butter 2 slices of bread. Spread your boiled egg fry over the bread with the buttered side down. Add some fresh salad veggies like grated carrots, lettuce or cheese if you want. Cover and toast in a sandwich toaster.
